La Gastronomia Ligure Pesto Trofie
Ingredients for 4 people
- 200g of green beans
- 350/400g of trofie pasta
- 2 medium sized potatoes
- 1 jar of La Gastronomia Ligure Pesto
- Extra-virgin Olive Oil
Wash the beans and trim the ends, then boil them and whilst still crispy drain and cut them in half. Peel the potatoes, cut them into cubes and place them in salted boiling water to cook.
When they start to boil, wait a few minutes and then put the trofie pasta in the same water as the potatoes; this means they will be ready at the same time as the potatoes.
Wait a few minutes (around 4 for fresh trofie) and then drain, putting the trofie and potatoes in the dish already containing the La Gastronomia Ligure Pesto, beans and a little bit of Extra-Virgin olive oil.
Mix them gently so that the vegetables stay whole.
In the traditional recipe the vegetables and pasta are boiled in the same pot but depending on the different cooking times, if you are not sure how to time everything together you can boil them separately.
